Pesto Pasta Salad in A Jar


This quick and easy pasta salad is a great on-the-go lunch. Whether you're packing a picnic or just an office lunch, this Mason jar meal is perfect.

SERVES: 6
PREP TIME: 25 Minutes
COOK TIME: 10 Minutes

Ingredients

1 lb. penne
2 c. fresh basil
1/4 c. pine nuts
1/3 c. grated Parmesan
2 cloves garlic, roughly chopped
1/4 c. extra-virgin olive oil
1 pt. grape or cherry tomatoes, halved and quartered in large
1 c. crumbled feta, plus more for garnish
1 Quart size Mason Jar

Directions

	Step 1: Bring a large pot of water to boil. Cook penne according to package directions, until al dente.

	Steo 2: Drain, reserving 1/2 cup pasta water, and return to pot.

	Step 3: Add pesto and 1/4 cup pasta water to pot, stirring until saucy and creamy. (Add more pasta water until you reach you desired consistency.)

	Step 4: Add tomatoes and feta and stir until combined.

	Step 5: Divide pasta among six mason jars and top with additional feta. Can store up to 2 days in refrigerator.
